Cooking with the Farmer’s Wife!

Busy schedules call for creative approaches when comes time to dinner! In our household of two fulltime farmers and one growing teenage daughter, we have hearty appetites. We can get three (sometimes four!) meals from one of our average size chickens.

Here’s how we do it:

The first meal is prepared in the crock pot and uses the whole chicken. Don’t worry, it couldn’t be any easier! 

Thaw chicken, rinse and place in crock pot.  In a skillet saute onions and garlic in butter then pour over the top of the chicken (and don’t forget to get inside that beautiful bird too!).  Deglaze the skillet with a bit of water to get all those yummy bits and add all the liquids to the crockpot.  Cover and cook on high until done (about 3-4 hours).  Serve with a side dish of rice and some of Byrd Farm’s braised leafy green vegetables and it’s a complete, healthful meal.

The second meal consists of left overs.  No complaints here!

The last meal is always one of my favorites: soup!  

Remove the remaining white meat from the bones of the chicken, cutting it into equal sizes and place in approximately 4 cups of water and heat through. And here’s the tip on how to make it extra delicious. Add a bit of what I call a “Country Bechamel Sauce.”   

Country Bechamel Sauce: In a skillet, melt butter, add minced shallots (remember Byrd Farm shallots store great, so stock up when you see them at the market!). Cook until shallots are slightly browned, but don't scorch! Add flour and stir until it becomes a creamy paste and the butter is absorbed.  Add milk and cook to achieve a thick gravy consistency, stirring with a whisk. Pour your sauce into the soup and stir until blended.

After adding the sauce to the chicken, stir until thickened to desired consistency for a creme soup.  Finally, add your leftover veggies and rice. If you’re looking to bulk the soup up even more another delicious addition is shredded cabbage!
